On the 33rd floor of Torre Emperador Castellana, more than 160 metres above ground, Élkar restaurant offers a dining experience in which the cuisine and views over Madrid share the spotlight. From this location, the capital’s skyline accompanies every moment, making the urban landscape an essential part of the visit.
Backed by Aramark España and under the gastronomic direction of chefs Fran Vicente and Pablo Verdúguez, Élkar has developed a proposal based on Mediterranean cuisine centred on the finest produce. Its offering seeks to combine recognisable dishes with a contemporary perspective, while maintaining constant evolution linked to the seasons.
Seasonal Mediterranean cuisine
Élkar’s menu adapts to each time of year to work with ingredients at their best. The restaurant describes its offering as elegant cuisine in continuous evolution, in which produce, technique and presentation come together in an experience designed to allow guests to enjoy both the dishes and their surroundings.
For those who prefer a broader journey through the restaurant’s culinary identity, it offers two tasting menus, featuring six and ten courses. The dishes follow one another with rhythm and coherence on a gastronomic journey that includes creations such as 18-year-old Fundador foie gras and roasted grouper with beurre blanc and caviar.
These dishes sum up Élkar’s approach: cuisine that seeks to balance technique, produce and emotion, with an offering linked to the ingredients and the season. The experience is completed by a wine cellar featuring more than 180 national and international labels, selected to accompany the various dishes and create harmonious pairings throughout the meal.
A restaurant recommended by the Repsol Guide
In 2026, Élkar was once again named a restaurant recommended by the Repsol Guide. This recognition consolidates its presence among the establishments associated with Madrid’s new gastronomic scene and reinforces an offering that combines fine dining, location and a contemporary approach to service.
The restaurant’s location makes it possible to view Madrid from a different perspective. The city appears as a changing backdrop as lunch or dinner progresses, in an experience where the space and the cuisine maintain a constant relationship.
Élkar Club, extending the evening
The experience does not necessarily end when guests leave the table. Located in the hall, Élkar Club offers a more relaxed setting in which to extend the visit with signature cocktails, music and a carefully curated atmosphere.
The club functions as a natural extension of the restaurant and retains views of the skyline as one of its main features. In this way, Élkar’s offering continues beyond the tasting menus, allowing guests to prolong the evening in a different setting that remains connected to the dining experience.
Summer break and reopening
Élkar will remain closed for its holiday break until 1 September, when it will reopen its doors to begin a new gastronomic season. During this period, the restaurant is keeping bookings open for its return, with the aim of making it easier for those wishing to come back after the summer to plan their visit.
